Saffron (Zarda) Rice

Zarda Rice (Saffron Rice)


1 cup long grain rice or basmati rice (soaked for 15 /20 minutes)
2 tbsp raisins
2 tbsp cashews
1 inch cinnamon stick (dalchini)
2 cardamom (elaichi)
A pinch of salt
3 tbsp sugar
3 tbsp ghee or oil
A large pinch of saffron
1 ½ cup of water
½ cup of milk


  • In a deep saucepan add ghee. Once hot add the cashews and raisins.
  • Keep aside around ½ tsp for garnish I had few pineseeds and almonds, so added both.
  • Once it is fried, add in the cinnamon and cardamom.
  • Now add the rice. Mix it gently for about 4-5 minute till the rice is nicely coated with the ghee.
  • Now add a pinch of salt, sugar, saffron, milk and water. Cover and cook in a low flame.
  • Once the water dries and the rice is cooked switch off the flame.
  • Garnish with fried cashews, raisins and few strands of saffron.

I used some leftover dried papaya.
