Prawn salad with Peanuts and Mandarin (orange)

Prawn salad with Peanuts and Mandarin is absolutely easy to prepare. Thanks to my colleague Hanim who gave me this wonderful receipe. It does not take much time and I’m sure it would be a hit amongst your friends and family. You can have this as a starter or if you are in no mood to have that boring dinner, this is the best salad you can switch it. So let’s see how to make prawn salad with peanuts and mandarin.

Ingredients:

1 large Mandarin or Orange
1/4th cup unsalted peanut
200 gms or 15-20 raw peeled tiger prawns
3-4 spring green onions (spring onion)
6-7 mint leaves chopped
1 sprig of chopped corriander leaves
salt to taste
1 large green chilly minced or sliced
1/2 tsp crushed dried red chilly
Pinch of grated nutmeg
1/2 tbsp fish sauce
3 tbsp fresh orange juice

Method:

  • Peel the Orange / Mandarin. Cut into small cubes. Remove the seeds and reserve the juice that oozes out while cutting the fruit.
  • Dry roast the peanuts for around 5 minutes in a slow fire. Cool and roughly chop it.
    Mix it with the cubed orange and set it aside.
  • Now poach the prawns. In a saucepan add around 1/2 cup of water and little salt.
  • Once the water starts to simmer add the prawns.
  • Once it turns pink remove it from the water and drain and keep it aside to cool.
  • This should roughly take 5-7 minutes.
  • In a large bowl, combine the peanut and orange mixture, add the fish sauce, orange juice, crushed dried red chilly, green chilly minced, chopped mint and corriander leaves, reserved orange juice from the flesh, if any, nutmeg powder and the poached prawns.
  • Toss everything together and serve immediately.
