Pineapple cake

Pan Pineapple Cake

Don’t have an oven at home and feel like baking a cake. Not to worry. This recipe is the perfect one to make without an oven. Its quick and does not take much time. Your kids will love it.


For Caramelising:
2 tbsp butter
2-3 tbsp brown sugar (if you do not have brown sugar you can use the white sugar. Brown gives a lot more of colour)

For the batter:
2 eggs
1 cup flour (Maida)
1/2 tsp of pineapple essence (any essence will do)
1/2 tsp baking powder
1 cup powder sugar (reduce the quantity as per the sweetness required I used just about 1/2 cup)
7/8 round sliced fresh or canned pineapple


  • Take a frying pan or any slightly deep saucepan. Once it is hot add in the butter. Once it melts add the brown sugar and stir it. Keep the flame on slow as you don’t want a burnt caramelized flavor.
  • Switch off the gas.
  • Arrange the sliced pineapple on the caramel you just prepared.
  • Meanwhile sift the flour and the baking powder together.
  • Add the powdered sugar and mix together. Add in a pinch of salt.
  • Break egg into a different bowl and beat till fluffy.
  • Add the egg slowly into the flour mixture and keep stirring.
  • Once all mixture is evenly mixed add in the essence.
  • Give it a nice stir and slowly pour it over the sliced pineapple.
  • Once all the batter is poured out cover the pan tigtly with a lid and switch on the gas.
  • Keep it on very low flame and cook it for around 15-20 minutes.
  • You can check if the cake is done by inserting a toothpick. If it comes out clean that means the cake is done to perfection.
  • Remove it from the gas and flip the pan upside down on to a plate and serve.

Enjoy it warm over with a nice hot cup of tea!!!
