Katachi Amti

Katachi Amti is made from the leftover water from boiled chana dal when you prepare the puran for puran poli. Katachi Amti is a great accompaniment for puran poli or can also be had with steamed rice.

1 cup leftover water from boiled chana dal
2 tbsp ghee or oil
1 tsp red chilly
1 bay leaf
2 cloves
1/2 inch cinnamon stick
1 tsp goda masala / garam masala or lahsun chutney
4-5 curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp white sesame seeds
3-4 tbsp tamarind pulp
2 tbsp jaggery
4 tbsp desiccated coconut
1tps red chilly powder
1/2 tsp turmeric powder
1/2 inch ginger
2 garlic cloves
1 cup water
Handful of coriander leaves

Method:

  • Dry roast the sesame and cumin seeds for a minute. Now add the desiccated coconut and fry for 3-4 minutes. Switch off the pan and let it cool.
  • In a grinder, coarsely grind the above mixture using little water. Add the ginger and garlic also.
  • In a vessel, add oil. Once hot, add the mustard seeds, some cumin, curry leaves, cloves, cinnamon and bay leaf. Saute it for a minute or so.
  • Add the ground masala and saute it for another minute.
  • Now add the chana dal water and one cup water.
  • once it starts boiling, add chilly powder, turmeric powder, tamarind juice, goda masala, jaggery, coriander leaves and salt to taste.
  • Bring it to a boil. Allow it to simmer for 10-15 minutes. You will see the oil floating on top.
  • That means your katachi amti is ready.
  • Serve it with puran poli.
