How to Make Dabeli at Home

Dabeli is a street food which originated from Kutch, Gujarat. The local name is Kutchi Dabeli.  It is easliy found in Mumbai and in Gujarat. It is also a street snack which is available in most of the street corners in Mumbai.

Kutchi dabeli is a sweet and spicy potato which is filled inside the round bun along with few other ingredients. Whever I visit India, I make it a point to dabeli which is available near our house.

Initially, I thought making dabeli at home was a very long and tedious, but when it actually came to preparing I found it quite simple and easy.


3-4 medium potatoes
1 medium sized onion chopped
1 tsp cumin seeds (Jeera)
1/4th tsp asafoetida (hing)
salt to taste
8 round buns (Indian pav)
4-5 tbsp ghee or butter

Dabeli Masala:
2 dried red chillies
1 tsp cumin seeds
1 tsp coriander seeds
1 inch cinnamon stick
2-3 cloves
1 cardamom

For the Filling:
1 onion finely chopped
1/2 cup finely chopped coriander leaves
1 cup pomegranate seeds
1/2 cup toasted peanuts
1/2 cup fine sev (fried gram flour) available in any Indian store
1/2 cup sweet chutney (tamarind & dates chutney)
1/2 cup fresh or dried coconut
1/2 cup halved fresh green grapes

For the Garlic Chutney:
1/2 cup peeled garlic
2-3 dried red chilly (soak it for 30 minutes)
Salt to taste
1/2 tsp lemon juice


  • Boil the potatoes. Once cooled peel and mash them and keep aside.
  • Grind together the ingredients under the garlic chutney.  Use some water to grind to a paste. Keep it aside.
  • Take a frying pan and dry roast the ingredients under the Dabeli masala. Do not let it burn. Once you get the nice aroma of the spices remove it from the fire and dry grind the whole masala into fine powder. You can store this masala and use it for other receipes also.
  • Take another frying pan. Once hot add some ghee or butter and once it melts, add cumin seeds. Add the chopped onion. Saute till it is opaque. Now add the hing and mix. Add 1 to 2 tbsp sweet chutney. Mix it for 2-3 minutes.
  • Now add the mashed potato and mix it. Add 2 tbsp of the dabeli masala and mix it well. Add salt to taste.
  • If it is too dry add some water and mix it nicely.
  • Place the potato mixture in a flat plate. Spread fresh coconut or dried coconut over the mixture. Spread pomegranate and halved fresh green grapes. Now sprinkle with chopped corriander leaves.
  • In another frying pan, spread 1 tbsp ghee. Cut the bun into half and spread some butter or ghee.
  • Once the pan is hot keep the bun on it and roast it on both the sides.
  • Now assemble everything for the Dabeli.
  • Take the roasted bun on one side spread the sweet chutney and on the other side spread the garlic chutney. Now take some potato mixture and place it on the bun. Top it with chopped onion, pomegranate seeds and cut grapes and fine sev.
  • Close the bun with the mixture. Roll the sides over the fine sev.
  • Serve it warm with nice cuppa of hot tea!!!
