On a lazy weekend morning Egg bhurji is always first thing which comes to my mind. Simple and easy to cook and have it with bread..

3-4 eggs beaten
1 large onion chopped finely
1 large tomato chopped finely
3 green chillies chopped finely (increase the number as per the hotness required)
½ cup coarsely chopped coriander leaves
½ tsp turmeric powder
½ tsp mustard seeds
Salt to taste
2 tbsp oil

Method:

  • Take 2 tbsp oil in a pan.  Once the oil is hot add the mustard seeds.
  • Once it crackles add the chopped green chillies. Saute for 30 secs.
  • Now add the onion. Once it gets a pink shade add the chopped tomatoes and mix nicely.
  • Once the tomatoes gets mashed nicely add the turmeric powder and cook for another minute.
  • Now add the beaten eggs and mix it thoroughly.  Cover and cook for 1 minute.
  • Uncover and mix it nicely.  Keep stirring continuously till the water left behind the tomatoes and eggs is fully evaporated. Now add the chopped corriander and remove from fire.

Have it with hot chappatis or bread.
