Easy Gajar ka Halwa (Carrot Halwa)

Whenever you see red juicy carrots the first thing which comes into everyone’s mind is Carrot Halwa / Gajar ka Halwa. Just thinking, it makes your mouth water. I normally make the traditional carrot halwa using sugar, but this time I for a change used milkmaid and just to beat my conscious mind of trying to be healthy I used the low fat milkmaid and I could eat a bowl of gajar ka halwa, guilt free!!! Ingredients: 1kg grated Carrots (preferably go in for the red ones, if available) 1/3rd cup of milkmaid 1/2 tsp cardamom powder 1 tbsp cashew and raisins Almond flakes for garnish (optional)

Method:

  • In a kadai or a deep non-stick pan, add the grated carrots.
  • Keep stirring for around 3-4 minutes. The carrot will start leaving some water.
  • Once the carrot starts drying up add the milkmaid, raisins and cashews. If you want you can roast the raisins and cashes in ghee and add it.
  • Once you add the milkmaid it will start leaving some water.  Keep stirring in between.
  • Once the mixture starts thickening add in the cardamom powder.
  • Remove it from fire and garnish it with almond flakes

You can either have it warm or serve it cold. This is the easiest method to make gajar ka halwa. Very soon I will upload the traditional method of making the gajar ka halwa. Till then enjoy and take care!!!
